Go to cafe Broder in Portland, OR. You’ll see at the heart of the place is the grill and aptly so. The chef/cook/dude cooking is busy and attentive. Furiously flipping, pouring and dicing I felt like a kid watching the local Pizza makers ply their trade, only Swedish. The food is light and authentic. I ordered the Baked Egg Scramble with Potato Pancake (comes with toast). The egg scramble was light and flavorful while the potato pancake was an ample partner. The coffee, while not Swedish, was a local brew and a perfect choice providing a local touch without distracting or trying to be overly “Swedish” or Euro-hip. Service was excellent and I was never without a refill. The music they play is a blend of folk and rock which tells patrons to come as you are and be yourself. Delicious and worth the trip.
